Sapere Originis — Latin for "Know the Source" — was founded in 2019 by Meredith Hyslop, a Walla Walla native with a master's degree in international wine and spirits business from the Burgundy School of Business and six years managing exports for Château de Lascaux in France. Based between Walla Walla, Washington and Montpellier, France, Hyslop focuses on sustainable and organic producers primarily from France — Languedoc, Champagne, Alsace, Burgundy, Loire, and Bordeaux — as well as Spain and beyond. The portfolio is unified by a commitment to provenance transparency and organic or sustainable farming.
